Ingredients

  • 1 lb ground beef
  • 1 medium (diced) yellow onion
  • 1 packet (1 oz) taco seasoning mix
  • 2/3 cup water
  • 1 can (16 oz) refried beans
  • 1 cup sour cream
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 10 small corn tortillas
  • 1/2 cup sliced black olives
  • 2 sliced scallions (green onions)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, cook the ground beef over medium heat until it is browned and fully cooked. Drain any excess grease.

Step 3

Add the diced onion to the skillet and cook for 2-3 minutes until softened.

Step 4

Stir in the taco seasoning mix and water. Simmer the mixture for 5 minutes, stirring occasionally.

Step 5

In a small bowl, combine the refried beans, sour cream, and salsa. Mix until well blended.

Step 6

Lightly grease a 9x13-inch baking dish. Add a layer of 5 corn tortillas, overlapping if needed, to cover the bottom of the dish.

Step 7

Spread half of the bean mixture evenly over the tortillas.

Step 8

Top with half of the ground beef mixture and then sprinkle 1 cup of shredded cheddar cheese over the top.

Step 9

Repeat these layers (5 tortillas, bean mixture, beef mixture, cheddar cheese) to complete the second layer.

Step 10

Sprinkle the top with the sliced black olives.

Step 11

Bake the casserole in the preheated oven for 25 minutes, or until the cheese is melted and bubbly.

Step 12

Remove from the oven and let it cool for 5 minutes before garnishing with sliced scallions.

Step 13

Slice into portions and serve warm. Optionally, top with additional sour cream, salsa, or guacamole for extra flavor!
