Ingredients

  • 500 grams wide egg noodles
  • 4 large eggs
  • 3 medium onions
  • 120 ml vegetable oil
  • 2 tablespoons sugar
  • 1.5 tablespoons black pepper, freshly ground
  • 1 teaspoon salt
  • 0.5 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat the oven to 180°C (350°F). Grease a 9x13-inch baking dish or a deep round kugel pan and set aside.

Step 2

Cook the egg noodles according to the package instructions. Drain, rinse with cold water, and set aside.

Step 3

While the noodles cook, finely slice the onions and heat the vegetable oil in a large skillet over medium heat.

Step 4

Add the onions to the skillet and sauté for 10-15 minutes until golden brown and caramelized, stirring frequently to avoid burning.

Step 5

Once the onions are caramelized, add the sugar to the onions and continue cooking for another 2-3 minutes, stirring to combine well.

Step 6

In a large mixing bowl, whisk the eggs until frothy. Add the black pepper, salt, and half of the caramelized onion mixture. Mix well.

Step 7

Add the cooked and drained noodles to the bowl and toss everything together until evenly combined.

Step 8

Pour the noodle mixture into the prepared baking dish, spreading it out evenly. Top with the remaining caramelized onions.

Step 9

Bake in the preheated oven for 50-60 minutes, or until the kugel is golden brown and crispy on top.

Step 10

Optional: Sprinkle the top of the kugel with paprika for color before serving.

Step 11

Let the kugel cool slightly before cutting into pieces to serve. Enjoy warm or at room temperature!
