Ingredients

  • 3 cups Rolled oats
  • 1 cup Almonds (roughly chopped)
  • 1 cup Walnuts (roughly chopped)
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Dried cranberries
  • 0.5 cup Raisins
  • 0.25 cup Shredded coconut (unsweetened)
  • 0.25 cup Honey
  • 0.25 cup Maple syrup
  • 0.25 cup Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, walnuts, pumpkin seeds, sunflower seeds, ground cinnamon, and salt. Mix well to evenly distribute the ingredients.

Step 3

In a small saucepan over low heat, warm the honey, maple syrup, and coconut oil until fully melted and well-combined. Remove from heat and stir in the vanilla extract.

Step 4

Pour the wet ingredients over the dry ingredients. Use a spatula or your hands to mix until all the dry ingredients are evenly coated.

Step 5

Spread the granola mixture evenly onto the prepared baking sheet, pressing lightly to compact it slightly.

Step 6

Bake in the preheated oven for 25-30 minutes, stirring once halfway through to ensure even toasting. Keep a close eye during the last few minutes to prevent over-browning.

Step 7

Remove the granola from the oven and allow it to cool completely on the baking sheet. It will crisp up as it cools.

Step 8

Once the granola is completely cooled, stir in the dried cranberries, raisins, and shredded coconut.

Step 9

Store the granola in an airtight container at room temperature for up to 2 weeks. Enjoy it with yogurt, milk, or as a snack on its own!
