Ingredients

  • 1 head Romaine lettuce
  • 1.5 cups Cherry tomatoes
  • 0.5 medium Red onion
  • 1 medium Cucumber
  • 0.5 cup Black olives
  • 0.25 cup Parmesan cheese
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the romaine lettuce thoroughly under cold water. Pat dry with paper towels or use a salad spinner to remove excess moisture. Chop the lettuce into bite-sized pieces and place it in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl.

Step 3

Peel and thinly slice the red onion. Add it to the bowl.

Peel the cucumber (optional) and slice it into thin rounds or half-moons. Add the cucumber slices to the bowl.
