Ingredients

  • 2 pounds Beef stew meat
  • 4 whole Carrots
  • 4 medium Potatoes
  • 1 large Onion
  • 3 cloves Garlic
  • 3 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 Bay leaf
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Peel and chop the carrots and potatoes into bite-sized chunks.

Step 2

Chop the onion into small pieces and mince the garlic.

Step 3

In a skillet over medium heat, sear the beef stew meat until browned on all sides. This step is optional but enhances the flavor.

Step 4

Place the beef, carrots, potatoes, onion, and garlic into the crock pot.

Step 5

In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, salt, black pepper, and dried thyme. Pour the mixture over the ingredients in the crock pot.

Step 6

Add the bay leaf to the pot.

Step 7

Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until the meat is tender and the vegetables are cooked through.

Step 8

To thicken the sauce, whisk together the cornstarch and water to form a slurry. Stir the slurry into the crock pot during the last 30 minutes of cooking.

Step 9

Taste and adjust seasoning if needed. Remove the bay leaf before serving.

Step 10

Serve hot in bowls, optionally with a side of crusty bread for dipping.
