  • 1 cup Whole milk
  • 0.75 cup Granulated sugar
  • 0.33 cup Cocoa powder (unsweetened)
  • 4 oz Semi-sweet chocolate
  • 4 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan, combine the heavy cream, whole milk, cocoa powder, and salt. Heat over medium heat, whisking frequently, until the mixture just begins to simmer. Do not let it boil.

Remove the saucepan from heat and add the semi-sweet chocolate. Stir until the chocolate is completely melted and the mixture is smooth.

In a separate mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Slowly temper the egg mixture by adding 1/2 cup of the hot chocolate mixture to the eggs while continuously whisking to prevent curdling.
