Ingredients

  • 1 piece Whole chicken (4-5 lbs)
  • 2 tablespoons Olive oil
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Paprika
  • 2 teaspoons Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Brown sugar
  • 1 can Beer (any 12oz can of your choice)
  • 1 piece Lemon
  • 2 sprigs Fresh rosemary sprigs

Directions

Step 1

Preheat your grill or oven to 375°F (190°C). For a grill, set up for indirect cooking.

Step 2

Remove the neck and giblets from the chicken. Rinse the chicken inside and out, and pat it dry with paper towels.

Step 3

Rub the chicken all over with olive oil. Combine salt, black pepper, paprika, garlic powder, onion powder, dried thyme, and brown sugar in a small bowl. Generously season the chicken with this spice rub, ensuring all surfaces are coated.

Step 4

Open the can of beer and drink or pour out about a third of it. Add two sprigs of fresh rosemary and a few drops of lemon juice to the can for extra aroma.

Step 5

Carefully place the chicken over the beer can so the can fits into the cavity and the chicken is standing upright. Adjust the legs to create a tripod effect for stability.

Step 6

Place the chicken (standing upright) on the grill or in a roasting pan inside the oven. Close the grill lid or the oven door and cook for 1 hour and 30 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (74°C).

Step 7

Carefully remove the chicken from the grill or oven and let it rest for 10-15 minutes. Use tongs to gently lift the chicken off the beer can.

Step 8

Carve the chicken and serve warm. Pair with your favorite sides for a complete meal.
