Ingredients

  • 2 cups Rolled oats
  • 1/3 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1 cup Milk
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter, melted
  • 1 medium Banana, mashed
  • 1 cup Fresh or frozen berries
  • 1/3 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish or a similar-sized dish.

Step 2

In a large mixing bowl, combine the rolled oats, brown sugar, baking powder, ground cinnamon, and salt. Mix well to ensure the dry ingredients are evenly distributed.

Step 3

In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until fully combined. Stir in the mashed banana.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and stir until everything is well combined. The mixture will be thick and slightly lumpy.

Step 5

Gently fold in the berries (and nuts if using) until evenly distributed throughout the mixture.

Step 6

Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the oatmeal is set. A toothpick inserted into the center should come out clean.

Step 8

Allow the baked oatmeal to cool for 5-10 minutes before serving. Optionally, top with a drizzle of maple syrup, additional berries, or a dollop of yogurt.

Step 9

Serve warm and enjoy! Leftovers can be stored in the refrigerator for up to 5 days and reheated as needed.
