Ingredients

  • 1 pound fresh green beans (trimmed and cut into 2-inch pieces)
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion (finely chopped)
  • 2 cloves garlic (minced)
  • 8 ounces button mushrooms (chopped)
  • 2 tablespoons all-purpose flour
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon soy sauce
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1.5 cups crispy fried onions
  • 0.5 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until they are bright green and slightly tender. Drain and transfer to an ice bath to stop the cooking process. Drain again and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes or until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Stir in the mushrooms and cook for 5-6 minutes, until they release their moisture and are golden brown.

Step 5

Sprinkle the flour over the mushrooms and stir well to coat. Cook for 1 minute to remove the raw flour taste.

Step 6

Gradually pour in the broth, stirring constantly to avoid lumps. Follow with the heavy cream, and continue to stir until the mixture thickens, about 3-4 minutes.

Step 7

Add the soy sauce, salt, and black pepper to the sauce. Taste and adjust seasoning if needed.

Step 8

Combine the blanched green beans with the mushroom sauce in a large mixing bowl. Mix well to coat the beans evenly.

Step 9

Transfer the mixture to a 9x13-inch baking dish. Spread it out evenly.

Step 10

If using, sprinkle the shredded cheddar cheese over the top. Add an even layer of crispy fried onions.

Step 11

Bake in the preheated oven for 15-20 minutes, or until the casserole is bubbling around the edges and the fried onions are golden brown.

Step 12

Remove from the oven and let cool for 5 minutes before serving. Enjoy your homemade green bean casserole!
