  • 0.5 cup diced red bell pepper
  • 0.5 cup diced onion
  • 0.5 cup salsa
  • 2 tablespoons fresh cilantro (optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set aside.

In a large skillet, cook the bacon slices over medium heat until crisp. Remove the bacon and place it on a plate lined with paper towels to drain. Once cool, crumble the bacon into small pieces.

Wipe the skillet clean and add the butter. Heat over medium heat.

Add the diced red bell pepper and onion to the skillet. Cook, stirring occasionally, for about 3-4 minutes, or until the vegetables are softened.
