Preheat your oven to 375°F (190°C).
Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic, cumin, salt, and black pepper, and sauté for another minute until fragrant.
In a large mixing bowl, combine the cooked shredded chicken, 1 cup of enchilada sauce, half of the shredded cheddar cheese, and the sautéed onion mixture. Mix well to evenly coat the chicken.
Lightly grease a 9x13-inch baking dish. Spread 1/2 cup of the enchilada sauce over the bottom of the dish.
Warm the tortillas in a microwave for 30 seconds or until pliable. This helps prevent tearing when rolling.
Spoon about 1/4 cup of the chicken mixture onto each tortilla. Roll it tightly and place it seam-side down in the prepared baking dish. Repeat this step with the remaining tortillas and chicken mixture.
Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure all are well coated. Sprinkle the remaining cheddar cheese and the Monterey Jack cheese on top.
Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Then, remove the foil and bake for an additional 5 minutes or until the cheese is melted and bubbly.
Carefully remove the dish from the oven and let it rest for 5 minutes before serving.
Garnish with chopped cilantro and serve with a dollop of sour cream if desired.
