Ingredients

  • 2 tablespoons olive oil
  • 12 ounces smoked sausage
  • 1 pound boneless, skinless chicken thighs
  • 12 ounces shrimp (peeled and deveined)
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes
  • 2 cups chicken broth
  • 1 cup long-grain white rice (uncooked)
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks scallions (for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a baking dish and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Slice the smoked sausage into 1/4-inch rounds and cook until browned on both sides. Transfer to a plate.

Step 3

Add the remaining tablespoon of olive oil to the same skillet. Cut the chicken thighs into bite-sized pieces, season lightly with salt and pepper, and cook until browned on all sides. Remove and set aside with the sausage.

Step 4

In the same skillet, sauté the diced onion, bell pepper, and celery until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Add the canned diced tomatoes (and their juice), chicken broth, Cajun seasoning, dried thyme, paprika, and uncooked rice into the skillet. Stir well to combine.

Return the cooked sausage and chicken to the skillet, and stir everything together. If using shrimp, layer them on top of the mixture but do not stir them in.

Transfer the mixture to the prepared baking dish and spread evenly.

Cover the baking dish tightly with aluminum foil and bake for 30 minutes.

After 30 minutes, remove the foil and gently stir. If the rice isn’t fully cooked, cover and return to the oven for an additional 5-10 minutes, checking for doneness.

Once the rice is tender, remove the dish from the oven. Let sit for about 5 minutes before serving.

Step 11

Garnish with chopped scallions and serve hot!
