Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 4 pieces Garlic cloves, minced
  • 2 teaspoons Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 pieces Red bell peppers, cut into 1-inch pieces
  • 2 pieces Zucchini, cut into 1-inch rounds
  • 1 piece Red onion, cut into wedges
  • 8 pieces Metal or wooden skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 2

Cut the chicken breasts into 1-inch cubes and place them in a large bowl.

Step 3

In a small bowl, whisk together olive oil, lemon juice, minced garlic, paprika, oregano, cumin, salt, and black pepper to make the marinade.

Step 4

Pour the marinade over the chicken, mix well to coat evenly, and cover the bowl. Let the chicken marinate in the refrigerator for at least 30 minutes (or up to 4 hours for fuller flavor).

Step 5

Preheat a grill or grill pan to medium-high heat.

Step 6

Thread the marinated chicken pieces onto skewers, alternating with red bell peppers, zucchini, and red onion pieces. Leave a little space between each piece on the skewer for even cooking.

Step 7

Lightly oil the grill grates or grill pan to prevent sticking.

Step 8

Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and has reached an internal temperature of 165°F (75°C).

Step 9

Remove the skewers from the grill and let them rest for 5 minutes before serving.

Step 10

Serve warm with your favorite dipping sauce or a side of rice or salad for a complete meal.
