Ingredients

  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1 cup Granulated sugar
  • 2 tablespoons Light corn syrup
  • 2 tablespoons Cream cheese, softened
  • 1 teaspoon Peppermint extract
  • 0.25 teaspoon Sea salt
  • 2 drops Natural food-grade green coloring (optional)
  • 0.5 cup Soft buttermints, crushed (optional)

Directions

Step 1

In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, and light corn syrup. Heat the mixture over medium heat, stirring constantly, until the sugar dissolves and the mixture begins to steam. Do not boil.

Step 2

In a small bowl, whisk the cream cheese until smooth. Gradually add a few tablespoons of the warm milk mixture to the cream cheese, whisking until well blended. Pour the cream cheese mixture back into the saucepan and whisk until fully incorporated.

Step 3

Bring the mixture to a gentle simmer and cook for about 5–7 minutes, stirring frequently, until the base thickens slightly. Remove from heat.

Step 4

Stir in the peppermint extract, sea salt, and food-grade green coloring (if using) to give the ice cream a minty hue. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours, or until thoroughly chilled.

Step 5

Pour the chilled ice cream base into an ice cream maker and churn according to the manufacturer’s instructions. This typically takes about 20–25 minutes.

Step 6

If desired, fold in the crushed buttermints during the last minute of churning. This will add texture and extra minty sweetness.

Step 7

Transfer the churned ice cream to a lidded container and freeze for 4–6 hours, or until firm. Serve and enjoy this rich, creamy Savannah buttermint ice cream!
