Ingredients

  • 4 tablespoons Unsalted butter
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 1 pound, sliced Mushrooms (button or cremini)
  • 3 tablespoons All-purpose flour
  • 1.5 teaspoons Paprika
  • 4 cups Vegetable broth
  • 2 tablespoons Soy sauce
  • 1 cup Whole milk
  • 0.5 cup Sour cream
  • 1 teaspoon Dried dill weed
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 teaspoons Lemon juice
  • 2 tablespoons, chopped Fresh parsley (optional)

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened, about 5 minutes.

Step 2

Stir in the minced garlic and cook for another minute until fragrant.

Step 3

Add the sliced mushrooms to the pot and cook for approximately 8-10 minutes, stirring occasionally, until the mushrooms release their liquid and begin to brown.

Step 4

Sprinkle the flour and paprika over the mushrooms. Stir well to coat and cook for 2 minutes to remove the raw flour taste.

Step 5

Gradually pour in the vegetable broth while stirring to prevent lumps. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.

Step 6

Stir in the soy sauce, milk, and sour cream until fully combined. Allow the soup to simmer gently for another 5 minutes. Do not let it boil, as this can cause the dairy to curdle.

Step 7

Add the dried dill weed, salt, ground black pepper, and lemon juice. Taste and adjust seasoning if necessary.

Step 8

To serve, ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread or a side salad.
