Ingredients

  • 1 pound Ground beef
  • 1 packet Taco seasoning mix
  • 0.5 cup Water
  • 6 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 cup Black beans
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Red onion
  • 0.25 cup Cilantro, chopped
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 1 Avocado
  • 2 cups Tortilla chips
  • 1 Lime

Directions

Step 1

In a skillet over medium heat, cook the ground beef until browned and fully cooked, approximately 7-8 minutes. Drain any excess grease.

Step 2

Add the taco seasoning mix and water to the skillet with the cooked beef. Stir well and simmer for 2-3 minutes until the mixture thickens. Remove from heat and set aside to cool slightly.

Step 3

While the beef cools, wash and chop the romaine lettuce into bite-sized pieces. Place it in a large mixing bowl.

Step 4

Halve the cherry tomatoes and dice the red onion. Add them to the bowl along with the rinsed and drained black beans, shredded cheddar cheese, and chopped cilantro.

Step 5

Peel, pit, and dice the avocado. Set it aside for topping the salad later.

Step 6

In a small bowl, mix the sour cream and salsa together to create a creamy dressing.

Step 7

To assemble, add the slightly cooled taco beef to the bowl with the vegetables and toss everything gently to combine.

Step 8

Just before serving, roughly crush tortilla chips and sprinkle them over the salad for added crunch.

Step 9

Drizzle the sour cream and salsa dressing over the salad. Top with diced avocado and a squeeze of fresh lime juice for extra flavor.

Step 10

Serve immediately and enjoy your fresh, flavorful taco salad!
