Ingredients

  • 4 pieces (6-8 oz each) grouper fillets
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 tablespoons lemon juice
  • 2 cloves (minced) garlic
  • 2 tablespoons (chopped) fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons paprika
  • 2 tablespoons all-purpose flour
  • 1 tablespoon (optional) capers

Directions

Step 1

Rinse the grouper fillets under cold water and pat them dry with paper towels.

Step 2

In a small bowl, mix the salt, black pepper, and paprika. Sprinkle this seasoning mixture evenly over both sides of the grouper fillets.

Step 3

Lightly dredge the grouper fillets in the flour, shaking off any excess, and set them aside on a plate.

Step 4

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the grouper fillets in a single layer.

Step 5

Cook the grouper for 3–4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and place them on a plate. Tent with foil to keep warm.

Step 6

Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and cook for 30 seconds, or until fragrant.

Step 7

Add the lemon juice and capers (if using) to the skillet, stirring to combine. Let the sauce simmer for 1–2 minutes.

Step 8

Stir in the chopped parsley, then taste and adjust seasoning if needed.

Step 9

Return the cooked grouper fillets to the skillet, spooning the sauce over the top. Cook for 1–2 more minutes to warm through.

Step 10

Serve the grouper immediately with the sauce drizzled generously over the top. Pair with rice, vegetables, or a simple salad for a complete meal.
