Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic cloves, minced
  • 3 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Place the chicken breasts on a clean cutting board and, if needed, gently pound them with a meat mallet to evenly flatten to about 1/2 inch thickness. This helps ensure even cooking.

Step 2

In a small bowl, mix together the dried oregano, dried thyme, paprika, salt, and black pepper. Rub this seasoning mix evenly onto both sides of the chicken breasts.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside on a plate.

Step 4

Reduce the heat to medium-low, and add the remaining 1 tablespoon of olive oil to the skillet. Stir in the minced garlic and cook for 30 seconds, or until fragrant (be careful not to burn the garlic).

Step 5

Add the lemon juice and chicken broth to the skillet, stirring to combine with the garlic and any browned bits from the bottom of the pan. Let this mixture simmer for 2-3 minutes to slightly reduce.

Step 6

Return the cooked chicken breasts to the skillet, spooning the sauce over them. Cook for another 2-3 minutes to allow the chicken to absorb the flavors of the sauce.

Step 7

Remove the skillet from heat and garnish the chicken with chopped fresh parsley. Serve immediately with your favorite side dishes, such as roasted vegetables, rice, or a fresh green salad.
