Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 pound ground beef
  • 1 28-ounce can diced tomatoes, with juices
  • 3 tablespoons tomato paste
  • 1 cup beef broth
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar (optional, for balancing flavor)
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 0.5 cup shredded cheddar cheese (for serving)
  • 0.5 cup sour cream (for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until translucent.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the ground beef, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 8-10 minutes. Drain any excess fat if necessary.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Add the diced tomatoes, tomato paste, and beef broth, stirring to combine.

Step 7

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes, stirring occasionally.

Step 8

Add the kidney beans and black beans to the pot. Stir well and continue to simmer, uncovered, for another 10-15 minutes.

Step 9

Taste and adjust the seasoning with additional salt, pepper, or a teaspoon of sugar if needed.

Step 10

Serve the chili hot in bowls, garnished with fresh cilantro, shredded cheddar cheese, and sour cream. Enjoy!
