Ingredients

  • 10 pieces corn tortillas
  • 1 cup vegetable oil
  • 6 pieces roma tomatoes
  • 1 medium white onion
  • 2 cloves garlic cloves
  • 1 piece jalapeño or serrano pepper
  • 1 cup chicken or vegetable broth
  • 1 teaspoon salt
  • 1 cup queso fresco
  • 0.5 cup sour cream
  • 0.25 cup cilantro leaves
  • 4 pieces fried eggs (optional)
  • 1 piece avocado (optional)

Directions

Step 1

Cut the corn tortillas into six wedges each to create triangular chips.

Step 2

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, fry the tortilla wedges in batches until they are crispy and golden brown. Remove them with a slotted spoon and drain on a paper towel-lined plate. Set aside.

Step 3

In a blender, combine the tomatoes, half of the onion (roughly chopped), garlic cloves, jalapeño or serrano pepper, chicken or vegetable broth, and salt. Blend until smooth.

Step 4

Heat 1 tablespoon of the leftover vegetable oil in a large skillet over medium heat. Once hot, pour in the blended sauce. Cook for about 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

Step 5

Reduce the heat to low and add the fried tortilla chips to the skillet with the sauce. Gently toss to coat all the chips evenly with the sauce.
