  • 3 pounds beef chuck roast

  • 2 cups beef broth
  • 0.5 cup dry red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the chuck roast generously on all sides with salt, black pepper, paprika, thyme, and rosemary.

Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3–4 minutes per side.

Transfer the seared roast to the bottom of a crock pot.
