Season the chuck roast generously on all sides with salt, black pepper, paprika, thyme, and rosemary.
Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3–4 minutes per side.
Transfer the seared roast to the bottom of a crock pot.
In the same skillet, sauté the chopped onion for 2–3 minutes until softened. Add minced garlic and cook for another minute. Transfer the onions and garlic to the crock pot, spreading them over the roast.
Add the carrots and potatoes to the crock pot, surrounding the roast.
In a medium bowl, combine beef broth, red wine (if using), Worcestershire sauce, and any remaining seasoning blend. Pour the mixture over the roast and vegetables.
Cover the crock pot with its lid and cook on low heat for 8 hours, or until the meat is tender and easily pulls apart with a fork.
Once cooked, transfer the roast and vegetables to a serving platter. Tent with aluminum foil to keep warm.
Strain the cooking liquid into a saucepan. Bring it to a simmer over medium heat.
In a small bowl, mix cornstarch and water to create a slurry. Gradually whisk the slurry into the simmering liquid to thicken the gravy to your desired consistency.
Serve the roast and vegetables hot, drizzled with the savory gravy. Enjoy!
