Ingredients

  • 450 grams elbow macaroni
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1.5 cups mozzarella cheese, shredded
  • 0.5 cups parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted (for topping)

Directions

Step 1

Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil and cook the elbow macaroni according to package directions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt 4 tablespoons of butter over medium heat. Once melted, whisk in the flour until smooth. Cook for 1-2 minutes, stirring constantly, to remove the raw flour taste.

Step 4

Gradually whisk in the milk and heavy cream. Continue to whisk until the mixture thickens, about 5-7 minutes.

Step 5

Lower the heat to medium-low and stir in the cheddar cheese, mozzarella cheese, and parmesan cheese. Stir until the cheese is completely melted and the sauce is smooth. Season with salt, black pepper, and paprika.

Step 6

Add the drained macaroni to the cheese sauce and mix until evenly coated.

Step 7

Pour the macaroni and cheese mixture into the prepared baking dish, spreading it out evenly.

Step 8

In a small bowl, combine the breadcrumbs with 2 tablespoons of melted butter. Sprinkle the breadcrumb mixture evenly over the macaroni and cheese.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the breadcrumb topping is golden brown and the cheese is bubbling around the edges.

Step 10

Remove from the oven and let cool for 5 minutes before serving. Enjoy!
