Ingredients

  • 1 pound Shrimp (large, peeled and deveined)
  • 2 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Coconut milk
  • 1 cup Jasmine rice
  • 0.75 cup Water
  • 1 cup Pineapple (diced)
  • 0.5 cup Red bell pepper (diced)
  • 0.25 cup Red onion (finely chopped)
  • 2 tablespoons Cilantro (chopped)
  • 1 Lime (zested and juiced)
  • 1 teaspoon Honey
  • 0.25 teaspoon Chili flakes (optional)

Directions

Step 1

Rinse and pat dry the shrimp. In a medium bowl, toss the shrimp with olive oil, garlic, paprika, salt, and black pepper. Set aside to marinate while other components are prepared.

Step 2

In a medium saucepan, combine the jasmine rice, coconut milk, and water. Bring to a boil over medium heat, then reduce to a simmer. Cover and cook for 15-18 minutes or until the liquid is absorbed and the rice is tender. Fluff with a fork and keep warm.

Step 3

To prepare the pineapple salsa, combine the diced pineapple, red bell pepper, red onion, cilantro, lime zest, lime juice, honey, and chili flakes (if using) in a small bowl. Mix well, cover, and refrigerate until ready to serve.

Step 4

Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until shrimp are pink and opaque. Remove from heat.

Step 5

To assemble, scoop a generous portion of coconut rice onto each plate. Top with the cooked shrimp and a dollop of pineapple salsa. Garnish with additional cilantro, if desired.

Step 6

Serve immediately and enjoy the tropical flavors of Jeff Probst's Oscar's Delight!
