Ingredients

  • 2 pounds ground beef (80% lean)
  • 0.5 pounds ground pork
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 0.75 cup milk
  • 2 large eggs
  • 0.5 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons parsley, chopped
  • 1 teaspoon dried thyme
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 cup ketchup (for glaze)
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a standard loaf pan lightly with oil or line it with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, diced onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, parsley, thyme, salt, black pepper, and paprika.

Step 3

Use your hands (or a spatula) to gently mix all the ingredients until just combined. Avoid over-mixing to keep the meat loaf tender.

Step 4

Transfer the mixture into the prepared loaf pan and press it down evenly, shaping the top to be slightly rounded.

Step 5

In a small bowl, whisk together the ketchup, brown sugar, and mustard for the glaze. Spread the glaze evenly over the top of the meat loaf.

Step 6

Place the loaf pan on a baking sheet (to catch any drips) and bake in the preheated oven for 55–60 minutes or until the internal temperature reaches 160°F (71°C).

Step 7

Remove the meat loaf from the oven and let it rest for 10 minutes before slicing.

Step 8

Carefully slice the meat loaf and serve warm. Pair with mashed potatoes, roasted vegetables, or your favorite side dishes for a complete meal.
