Ingredients

  • 4 fillets Catfish fillets
  • 2 tablespoons Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoons Unsalted butter
  • 4 wedges Lemon wedges

Directions

Step 1

In a small bowl, mix together the paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper to create the blackened seasoning.

Step 2

Pat the catfish fillets dry with paper towels to remove excess moisture.

Step 3

Coat both sides of each catfish fillet generously with the blackened seasoning. Press the seasoning onto the fish to ensure it sticks well.

Step 4

Heat a large cast-iron skillet over medium-high heat until it is very hot, about 3-4 minutes.

Step 5

Add 1 tablespoon of unsalted butter to the skillet and swirl to coat the bottom.

Step 6

Place one or two fillets in the skillet (depending on the size of your pan) and cook undisturbed for 2-3 minutes, or until the bottom is deeply browned and blackened.

Step 7

Carefully flip the fillets using a fish spatula and cook the other side for an additional 2-3 minutes, or until the fish is opaque and flakes easily with a fork.

Step 8

Remove the cooked fillets from the pan and repeat the process with the remaining butter and fish.

Step 9

Serve the blackened catfish hot with lemon wedges on the side for squeezing over the top.
