Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 0.5 cup (finely diced) yellow onion
  • 2 cloves (minced) garlic
  • 8 ounces tomato sauce
  • 2 cups chicken broth
  • 0.5 cup diced carrots
  • 0.5 cup frozen peas
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons (chopped) fresh cilantro (optional, for garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch. Let it drain in a fine-mesh sieve.

Step 2

In a medium-sized skillet or saucepan, heat the vegetable oil over medium heat.

Step 3

Add the drained rice to the skillet and sauté it, stirring frequently, until it turns golden brown, about 3-5 minutes.

Step 4

Stir in the diced onion and minced garlic. Cook for 2 minutes until the onion becomes soft and fragrant.

Step 5

Pour in the tomato sauce and chicken broth, then stir to combine. Add the carrots, peas, ground cumin, salt, and black pepper. Mix well.

Step 6

Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a tight-fitting lid.

Step 7

Let the rice simmer on low heat for 18-20 minutes, or until the rice is cooked and has absorbed all the liquid. Avoid lifting the lid while cooking to ensure even steaming.

Step 8

Once done, remove the skillet from the heat and let it sit, covered, for an additional 5 minutes.

Step 9

Fluff the rice with a fork and garnish with chopped fresh cilantro if desired. Serve warm and enjoy!
