Ingredients

  • 1 head Romaine lettuce
  • 4 cups Mixed baby greens

  • 0.25 cup Parmesan cheese
  • 0.5 cup Extra virgin olive oil
  • 3 tablespoons Red wine vinegar
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash and dry the romaine lettuce and baby greens. Chop the romaine lettuce into bite-sized pieces.

Step 2

Halve the cherry tomatoes. Peel and slice the cucumber into thin rounds. Thinly slice the red onion.

Step 3

In a large salad bowl, combine the romaine lettuce, mixed baby greens, cherry tomatoes, cucumber, red onion slices, shredded carrots, and black olives.
