  • 2 pieces Chicken breast (boneless, skinless)
  • 1 medium Yellow onion (chopped)
  • 4 cloves Garlic (minced)
  • 3 medium Carrots (peeled and chopped)
  • 3 stalks Celery (chopped)
  • 1 large Russet potato (peeled and diced)
  • 8 cups Chicken broth (low sodium)
  • 2 leaves Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 cups Egg noodles
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Lemon juice (optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts lightly with salt and pepper, then add them to the pot. Cook for 3-4 minutes on each side until lightly browned. Remove the chicken and set aside.

Step 3

In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is softened and translucent.

Add the chopped carrots, celery, and diced potato. Sauté for another 3-4 minutes, stirring occasionally.

Pour in the chicken broth, then add the bay leaves, dried thyme, salt, and black pepper. Stir to combine.
