Ingredients

  • 4 pieces lamb shanks
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 2 cups beef stock
  • 1 14-ounce can canned diced tomatoes
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Season the lamb shanks with salt and pepper on all sides.

Step 3

Heat the olive oil in a large, oven-proof pot or Dutch oven over medium-high heat.

Step 4

Sear the lamb shanks in the hot oil, turning occasionally, until they are browned on all sides. This will take about 8-10 minutes. Remove the lamb shanks and set them aside.

Step 5

In the same pot, add the onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

Step 6

Add the minced garlic and tomato paste. Stir and cook for 1-2 minutes until fragrant.

Step 7

Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let the wine simmer for about 3 minutes to reduce slightly.

Step 8

Add the beef stock, diced tomatoes (with their juice), rosemary, thyme, and bay leaves. Stir to combine.

Step 9

Return the lamb shanks to the pot, ensuring they are partially submerged in the liquid.

Step 10

Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

Step 11

Cook the lamb shanks in the oven for 2.5 to 3 hours, or until the meat is fall-apart tender. Turn the shanks halfway through cooking, if needed.

Step 12

Remove the pot from the oven and discard the rosemary, thyme, and bay leaves.

Step 13

Taste the sauce and adjust the seasoning with additional salt and pepper if necessary.

Step 14

Serve the lamb shanks with the sauce spooned over them, garnished with freshly chopped parsley. Pair with mashed potatoes, polenta, or crusty bread for a complete meal.
