Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 0.75 cup whole milk
  • 1 large egg
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.5 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 0.5 cup chopped pecans (optional)
  • 2 tablespoons unsalted butter (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan.

Step 2

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Step 3

Add the egg and vanilla extract, mixing well to combine.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Step 6

Pour the batter into the prepared baking pan and spread evenly with a spatula.

Step 7

In a small bowl, prepare the streusel topping by mixing the brown sugar, ground cinnamon, and (if using) chopped pecans. Cut in the 2 tablespoons of unsalted butter until the mixture resembles coarse crumbs.

Step 8

Sprinkle the streusel mixture evenly over the batter in the pan.

Step 9

Bake in the preheated oven for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove from the oven and let the coffeecake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely or serve warm.

Step 11

Slice and enjoy with your favorite cup of coffee or tea!
