Ingredients

  • 4 tablespoons butter
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 3 cups cooked chicken, shredded or diced
  • 0.333 cup all-purpose flour
  • 2 cups chicken broth
  • 0.667 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 pie crusts (homemade or store-bought)
  • 1 egg, beaten

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a large skillet, melt the butter over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, for about 5-7 minutes, or until the vegetables are softened.

Step 3

Stir in the flour, cooking for 1-2 minutes to eliminate the raw flavor.

Step 4

Gradually whisk in the chicken broth and heavy cream, making sure there are no lumps. Bring to a simmer and cook for 4-5 minutes, or until the mixture thickens.

Step 5

Add the shredded chicken, frozen peas, thyme, salt, and black pepper to the skillet. Stir well to combine and remove the skillet from heat.

Step 6

Roll out one of the pie crusts and fit it into a 9-inch pie dish. Trim any excess edges.

Step 7

Pour the filling mixture into the prepared pie crust.

Step 8

Cover the filling with the second pie crust. Pinch and crimp the edges to seal.

Step 9

Cut a few small slits in the top crust to allow steam to escape.

Step 10

Brush the top crust with the beaten egg to help it turn golden in the oven.

Step 11

Place the pie on a baking sheet to catch any spills, and bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.

Step 12

Let the pot pie cool for 10 minutes before serving.
