Ingredients

  • 2 cups Long-grain white rice
  • 3 cups Chicken broth
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Rinse the rice under cold water until the water runs clear. Set it aside to drain thoroughly.

Step 3

In a large ovenproof skillet or casserole dish, heat olive oil and butter over medium heat until the butter is melted.

Step 4

Add the diced onion to the skillet and sauté for 3-4 minutes, or until it becomes translucent.

Step 5

Stir in the minced garlic and cook for an additional 1 minute, ensuring the garlic does not burn.

Step 6

Add the rinsed and drained rice to the skillet, stirring to coat it evenly with the oil and butter mixture. Toast the rice for 2-3 minutes.

Step 7

Pour in the chicken broth, then season with salt and black pepper. Stir well to combine all ingredients.

Step 8

Bring the mixture to a simmer, then cover the skillet tightly with a lid or aluminum foil.

Step 9

Transfer the skillet to the preheated oven and bake for 25 minutes, or until the rice is fully cooked and has absorbed all the liquid.

Step 10

Carefully remove the skillet from the oven. Let the rice rest, covered, for 5 minutes before fluffing it with a fork.

Step 11

Optional: Garnish with freshly chopped parsley before serving.
