Ingredients

  • 4 cups Pumpkin (peeled, seeded, and diced)
  • 1 large Yellow onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 large Carrot (peeled and chopped)
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • 2 tablespoons Olive oil
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cinnamon
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Pumpkin seeds (optional, for garnish)

Directions

Step 1

Heat a large pot over medium heat and add olive oil.

Step 2

Add the chopped onion and cook, stirring occasionally, for about 5 minutes or until softened.

Step 3

Stir in the garlic and carrot, cooking for another 2-3 minutes until fragrant.

Step 4

Add the diced pumpkin to the pot and stir to combine with the other vegetables.

Step 5

Pour in the vegetable broth and bring the mixture to a boil.

Step 6

Reduce the heat to a simmer, cover the pot, and cook for 20 minutes or until the pumpkin and carrot are fork-tender.

Step 7

Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, carefully transfer the mixture in batches to a blender and blend until smooth, then return it to the pot.

Step 8

Stir in the heavy cream, nutmeg, and cinnamon, and season with salt and black pepper to taste.

Step 9

Cook for an additional 5 minutes over low heat, stirring occasionally, until the soup is heated through.

Step 10

Serve the soup hot, garnished with pumpkin seeds if desired.
