Ingredients

  • 8 oz Cream cheese
  • 1 cup Sour cream
  • 2 tbsp Taco seasoning
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 lb Ground beef
  • 1 can (10 oz) Diced tomatoes with green chilies (e.g., Rotel)
  • 0.5 cup Sliced black olives
  • 2 stalks Green onions, chopped
  • 1 bag Tortilla chips

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess fat.

Stir taco seasoning into the cooked ground beef, following the packet instructions for adding water (if applicable), and let it simmer for 2-3 minutes. Set aside.

Step 4

In a medium bowl, mix together the cream cheese, sour cream, and half of the taco seasoning (if you have extra after seasoning the beef). Spread this mixture evenly at the bottom of a 9x13-inch baking dish.

Step 5

Layer the seasoned ground beef over the cream cheese mixture.

Step 6

Evenly spread the diced tomatoes with green chilies over the ground beef layer.

Step 7

Sprinkle the shredded cheddar cheese and Monterey Jack cheese evenly over the top.

Step 8

Scatter the sliced black olives over the cheese layer.

Step 9

Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the dish from the oven, and sprinkle the chopped green onions on top for a fresh finish.

Step 11

Serve warm with tortilla chips for dipping. Enjoy!
