Ingredients

  • 2 pounds ground beef
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 28 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons ground cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 1 cup shredded cheddar cheese (optional, for serving)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion and bell pepper, and sauté for 5 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.

Step 4

Push the vegetables to the side of the pot and add the ground beef. Cook until browned, breaking it apart with a wooden spoon as it cooks. Drain any excess grease, if necessary.

Step 5

Stir in the tomato paste and cook for 2 minutes to enhance its flavor.

Step 6

Add the canned diced tomatoes, kidney beans, black beans, and beef broth. Stir to combine.

Step 7

Mix in the chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using).

Step 8

Bring the chili to a boil, then reduce the heat to low. Cover the pot and let it simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 9

After simmering, taste and adjust seasoning with additional salt or spices, if desired.

Step 10

Ladle the chili into bowls and garnish with chopped cilantro, shredded cheddar cheese, and a dollop of sour cream, if desired.

Step 11

Serve hot with crusty bread or tortilla chips on the side. Enjoy!
