Ingredients

  • 400 grams farfalle pasta
  • 3 tablespoons olive oil
  • 3 medium garlic cloves
  • 200 grams canned tuna in olive oil
  • 100 grams Greek olives (pitted and sliced)
  • 200 grams cherry tomatoes (halved)
  • 20 grams fresh basil leaves
  • 1 teaspoon red chili flakes
  • 1 teaspoon lemon zest
  • 1 to taste salt
  • 1 to taste black pepper
  • 50 grams Parmesan cheese (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook farfalle pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Finely chop the garlic cloves and add them to the skillet. Sauté for 1-2 minutes, until fragrant but not browned.

Step 4

Add the canned tuna (with its olive oil) to the skillet and break it into chunks with a wooden spoon.

Step 5

Stir in the sliced Greek olives, halved cherry tomatoes, and red chili flakes. Cook for 3-4 minutes, stirring occasionally, until the tomatoes begin to soften.

Step 6

Add the cooked farfalle to the skillet along with the reserved pasta water, 1/4 cup at a time, to create a light sauce. Stir well to coat the pasta evenly.

Step 7

Season the dish with salt and black pepper to taste, then add the fresh basil leaves and lemon zest. Toss gently to combine.

Step 8

Remove the skillet from heat and let the flavors meld for 1-2 minutes.

Step 9

Serve the Farfalle Tonno immediately, garnished with freshly grated Parmesan cheese if desired.
