Ingredients

  • 1.75 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground ginger
  • 0.5 teaspoon Salt
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 0.5 cup Unsalted butter, melted and slightly cooled
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Pumpkin puree (not pumpkin pie filling)
  • 0.25 cup Milk
  • 0.5 cup Chopped pecans or walnuts (optional)
  • 0.5 cup Raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.

Step 3

In a large mixing bowl, combine the granulated sugar, brown sugar, and melted butter. Whisk until smooth and well combined.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Mix in the pumpkin puree until smooth. Gradually add the milk and stir until fully incorporated.

Step 6

Gradually fold the dry ingredients into the wet ingredients, stirring just until combined. Be careful not to overmix, as this can make the bread dense.

Step 7

If using, gently fold in the chopped nuts, raisins, or chocolate chips.

Step 8

Pour the batter into the prepared loaf pan and spread it evenly.

Step 9

Bake in the preheated oven for 55–60 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 11

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
