Ingredients

  • 4 pieces (6 ounces each) Halibut fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 2 cloves (minced) Garlic cloves
  • 2 tablespoons (chopped) Fresh parsley
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 0.25 cup (optional) White wine

Directions

Step 1

Pat the halibut fillets dry with paper towels. Season both sides of each fillet with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat.

Step 3

Once the oil is hot and shimmering, place the halibut fillets in the skillet. Sear for 3–4 minutes on one side without moving them, until a golden crust forms.

Step 4

Carefully flip the fillets and reduce the heat to medium. Cook for an additional 3–4 minutes on the other side, or until the fish is opaque and flakes easily with a fork. Remove the fillets from the skillet and set them aside on a plate.

Step 5

Reduce the heat to low and add the unsalted butter to the same skillet, allowing it to melt.

Step 6

Stir in the minced garlic and cook for 1 minute, until fragrant, being careful not to let it brown.

Step 7

Add the lemon juice, lemon zest, and white wine (if using). Let the sauce simmer for 2–3 minutes, stirring occasionally to deglaze the pan and incorporate the flavors.

Remove the skillet from heat and stir in the chopped parsley.
