Ingredients

  • 1 lb Ground beef
  • 1 cup Jasmine rice
  • 2 cups Chicken broth
  • 1 medium (diced) Onion
  • 2 (minced) Garlic cloves
  • 2 medium (diced) Carrots
  • 1 cup Frozen peas
  • 1 10.5 oz can Cream of mushroom soup
  • 1.5 cups (shredded) Cheddar cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika
  • 2 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the jasmine rice under cold water until the water runs clear, then set it aside.

Step 3

In a large skillet, heat olive oil over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened.

Step 4

Add the minced garlic, diced carrots, and ground beef to the skillet. Cook, stirring often, until the beef is browned and cooked through. Drain any excess grease.

Step 5

Stir in the salt, black pepper, and paprika. Mix well to season the beef and vegetables.

Step 6

In a 9x13-inch baking dish, spread the uncooked jasmine rice evenly over the bottom.

Step 7

Top the rice with the beef and vegetable mixture, spreading it out evenly.

Step 8

Pour the chicken broth over the meat and rice layers. Stir lightly to distribute the broth.

Step 9

Add the frozen peas on top, spreading them evenly.

Step 10

Spoon the cream of mushroom soup over the top layer and use a spatula to spread it evenly across the casserole.

Step 11

Cover the dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Step 12

Remove the foil and sprinkle the shredded cheddar cheese over the casserole. Return to the oven uncovered and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 13

Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy!
