  • 120 grams all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 80 grams granulated sugar
  • 1 tablespoon honey
  • 2 tablespoons milk
  • 1 teaspoon vegetable oil
  • 200 grams adzuki red bean paste (anko, sweetened)

Directions

Step 1

In a medium bowl, sift together the all-purpose flour and baking powder. Set aside.

Step 2

In another large bowl, whisk the eggs, granulated sugar, and honey until the mixture is pale and slightly thickened.

Step 3

Gradually add the flour mixture to the egg mixture. Stir gently until fully combined, but do not overmix.

Step 4

Add the milk and vegetable oil to the batter and mix until smooth. Cover the bowl and let the batter rest in the refrigerator for 15 minutes.

Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with a small amount of oil, then wipe off any excess with a paper towel.
