Ingredients

  • 400 grams Udon noodles (fresh or frozen)
  • 6 cups Dashi stock
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sake
  • 1 teaspoon Sugar
  • 2 stalks Green onions (sliced thinly)
  • 4 pieces Shiitake mushrooms (sliced)
  • 2 pieces Eggs (soft-boiled)
  • 100 grams Fish cake (optional, sliced)
  • 1 sheet Nori (seaweed sheets, cut into strips)
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil and cook the udon noodles according to the package instructions. If using frozen noodles, cook until just heated through. Drain and set aside.

Step 2

In a separate pot, bring the dashi stock to a gentle simmer over medium heat.

Step 3

Add soy sauce, mirin, sake, and sugar to the dashi stock. Stir well to combine and let the broth simmer for 5 minutes to allow the flavors to meld.

Step 4

Meanwhile, in a small pan, lightly sauté the sliced shiitake mushrooms until tender. Set aside for later use.

Step 5

Divide the cooked udon noodles evenly into serving bowls.

Step 6

Pour the hot broth over the noodles, ensuring each bowl has enough broth to cover the noodles generously.

Step 7

Top each bowl with sautéed mushrooms, sliced green onions, a soft-boiled egg (cut in half if desired), and fish cake slices, if using.

Step 8

Garnish with nori strips and a sprinkle of sesame seeds, if desired.

Step 9

Serve immediately while hot and enjoy your comforting Japanese Udon Noodle Soup!
