Ingredients

  • 300 grams Assorted mushrooms (shiitake, enoki, or button)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Mirin (Japanese sweet rice wine)
  • 1 teaspoon Sesame oil
  • 1 clove Garlic, finely minced
  • 1 teaspoon Ginger, finely grated
  • 2 stalks Green onions, thinly sliced
  • 1 tablespoon Toasted sesame seeds
  • 2 tablespoons Fresh cilantro (optional, for garnish)
  • 1 teaspoon Salt
  • 2 cups Water

Directions

Step 1

Clean the mushrooms by gently wiping them with a damp paper towel. Trim the stems of shiitake mushrooms and remove the root ends of enoki if using.

Step 2

Bring 2 cups of water and 1 teaspoon of salt to a boil in a medium saucepan.

Step 3

Blanch the mushrooms in the boiling water for 2-3 minutes, or until they soften slightly. For shiitake mushrooms, cook a little longer if needed. Drain and set aside to cool.

Step 4

In a small mixing bowl, whisk together the soy sauce, rice vinegar, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.

Step 5

Once the mushrooms are cool, gently toss them in the marinade, ensuring they are evenly coated. Let them sit for at least 10-15 minutes for the flavors to meld. For stronger flavor, marinate longer or refrigerate for up to 4 hours.

Step 6

Before serving, toss the mushrooms with sliced green onions and sprinkle the toasted sesame seeds on top.

Step 7

Garnish with fresh cilantro if desired and serve the salad chilled or at room temperature.
