Ingredients

  • 2 medium cucumber
  • 6 pieces radishes
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon honey
  • 1 tablespoon sesame seeds
  • 1 stalk green onion (optional)

Directions

Step 1

Wash the cucumbers and radishes thoroughly under cold water.

Step 2

Slice the cucumbers into thin rounds or half-moons, depending on your preference. If the cucumber skin is thick, consider peeling it partially.

Step 3

Trim the ends off the radishes and slice them into thin rounds.

Step 4

Place the cucumber and radish slices in a bowl and sprinkle with salt. Toss lightly and let sit for 10 minutes to draw out excess water.

Step 5

While the vegetables are resting, prepare the dressing by whisking together rice vinegar, soy sauce, toasted sesame oil, and honey in a small bowl.

Step 6

After 10 minutes, drain any water released from the cucumbers and radishes and gently pat them dry with a paper towel.

Step 7

Drizzle the dressing over the vegetables and toss to coat evenly.

Step 8

Sprinkle sesame seeds over the salad for added crunch and garnish with thinly sliced green onion, if using.

Step 9

Serve immediately for the freshest taste, or refrigerate for up to 1 hour before serving.
