Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 0.25 cup soy sauce
  • 0.25 cup mirin (sweet Japanese cooking wine)
  • 0.25 cup sake
  • 2 tablespoons sugar
  • 2 pieces garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon vegetable oil
  • 2 pieces green onions (optional, for garnish)
  • 2 cups steamed white rice (optional, for serving)

Directions

Step 1

In a small bowl, combine soy sauce, mirin, sake, sugar, minced garlic, and grated ginger. Stir until the sugar dissolves to create the marinade.

Step 2

Heat the vegetable oil in a large skillet over medium heat.

Step 3

Pat the chicken thighs dry with a paper towel and add them to the skillet, skin-side down.

Step 4

Cook the chicken for 5-6 minutes or until the skin turns golden brown and crispy. Flip and cook the other side for 4-5 minutes.

Step 5

Remove the chicken from the skillet and set aside on a plate. Drain excess oil from the skillet, leaving about 1 tablespoon.

Step 6

Lower the heat to medium-low and pour the marinade into the skillet. Let it simmer for 1-2 minutes to thicken slightly.

Step 7

Return the chicken to the skillet, skin-side up, and spoon the sauce over the chicken. Cover the skillet with a lid and let it simmer gently for 15-20 minutes. Flip the chicken halfway through and baste with the sauce again.

Step 8

Once the chicken is cooked through and the sauce has reduced to a glossy glaze, remove it from heat.

Step 9

Slice the chicken into bite-sized pieces and drizzle with the remaining sauce from the skillet.

Step 10

Garnish with sliced green onions, if desired, and serve hot with steamed white rice.
