Press the tofu by wrapping it in a clean kitchen towel, placing it on a plate, and putting a heavy object on top (like a small skillet) for about 10 minutes to remove excess water. Once pressed, cut the tofu into bite-sized cubes.
In a small bowl, mix together the soy sauce and mirin to create the stir-fry sauce. Set aside.
Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes and pan-fry them until they are golden brown on all sides (about 6-7 minutes). Remove the tofu from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of vegetable oil. Heat over medium heat, then add the minced garlic and grated ginger. Stir for about 30 seconds until fragrant.
Add the julienned carrot, green beans, and sliced shiitake mushrooms to the skillet. Stir-fry the vegetables for 3-4 minutes, or until they are slightly tender but still crisp.
Return the tofu to the skillet and pour in the soy sauce and mirin mixture. Toss everything gently to coat the tofu and vegetables evenly in the sauce. Continue cooking for another 1-2 minutes to allow the flavors to meld.
Drizzle the sesame oil over the stir fry and give everything a final toss.
Transfer the stir fry to a serving dish, garnish with chopped green onions and white sesame seeds if desired, and serve hot with steamed rice.
