Ingredients

  • 400 grams firm tofu
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 pieces garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 medium carrot, julienned
  • 150 grams green beans, trimmed
  • 100 grams shiitake mushrooms, sliced
  • 2 pieces green onions, chopped
  • 1 teaspoon white sesame seeds (optional)

Directions

Step 1

Press the tofu by wrapping it in a clean kitchen towel, placing it on a plate, and putting a heavy object on top (like a small skillet) for about 10 minutes to remove excess water. Once pressed, cut the tofu into bite-sized cubes.

Step 2

In a small bowl, mix together the soy sauce and mirin to create the stir-fry sauce. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes and pan-fry them until they are golden brown on all sides (about 6-7 minutes). Remove the tofu from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Heat over medium heat, then add the minced garlic and grated ginger. Stir for about 30 seconds until fragrant.

Add the julienned carrot, green beans, and sliced shiitake mushrooms to the skillet. Stir-fry the vegetables for 3-4 minutes, or until they are slightly tender but still crisp.
