Ingredients

  • 1 medium-sized Carrot
  • 2 tablespoons (grated) Ginger
  • 0.5 medium-sized Yellow onion
  • 2 tablespoons Soy sauce
  • 3 tablespoons Rice vinegar
  • 0.25 cup Vegetable oil
  • 2 teaspoons Sesame oil
  • 1 tablespoon Honey
  • 2 tablespoons Water
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Peel and roughly chop the carrot into small pieces.

Step 2

Grate the fresh ginger to measure out two tablespoons. Set aside.

Step 3

Roughly chop half of a medium-sized yellow onion.

Step 4

In a blender or food processor, combine the carrot, grated ginger, chopped onion, soy sauce, rice vinegar, vegetable oil, sesame oil, honey, water, salt, and black pepper.

Step 5

Blend the ingredients on high until the mixture is smooth and emulsified. This should take about 1-2 minutes.

Step 6

Taste the dressing and adjust the seasoning to your liking. Add a pinch more salt, honey, or vinegar if needed.

Step 7

Transfer the dressing to a jar or airtight container, and store in the refrigerator until ready to use.
