Ingredients

  • 300 g spaghetti (or pasta of choice)
  • 200 g shiitake mushrooms (fresh or dried, rehydrated if dried)
  • 150 g oyster mushrooms
  • 2 tbsp fresh ginger
  • 3 cloves garlic cloves
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 2 tbsp sesame oil
  • 1 tbsp olive oil
  • 3 stalks scallions (green onions)
  • 1 tbsp toasted sesame seeds
  • 1 tsp red chili flakes
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

Heat a large skillet over medium-high heat. Add the olive oil and sesame oil to the pan.

Step 3

Once the oil is hot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.

Add the shiitake and oyster mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

Pour in the soy sauce and mirin. Stir to combine and coat the mushrooms evenly. Allow the sauce to cook down slightly for about 1-2 minutes.
