Ingredients

  • 2 cups Water
  • 2 tablespoons Miso paste
  • 1 teaspoon Dried seaweed (nori or wakame)
  • 1 stalk Green onion
  • 1 teaspoon Soy sauce
  • 1 cup Cabbage or bok choy (shredded)
  • 1 small Carrot
  • 1 clove Garlic
  • 1 teaspoon Oil (vegetable or sesame)

Directions

Step 1

Rinse 1 cup of rice in cold water until the water runs clear. Combine it with 2 cups of water in a pot, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until cooked. Fluff with a fork and set aside.

Step 2

In a small pot, bring 2 cups of water to a simmer for the miso soup. Add 1 teaspoon of dried seaweed and simmer for a minute to rehydrate.

Step 3

Turn off the heat and dissolve 2 tablespoons of miso paste into the hot water. Stir gently until fully incorporated. Garnish with chopped green onion. Set aside.

Step 4

Peel and thinly slice 1 small carrot. Mince 1 garlic clove.

Step 5

Heat 1 teaspoon of oil in a skillet over medium heat. Add carrot slices and stir-fry for 2 minutes. Add 1 cup of shredded cabbage or bok choy and minced garlic. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.

Step 6

Drizzle 1 teaspoon of soy sauce over the vegetables and stir well to coat. Remove from heat.
