Ingredients

  • 450 grams Boneless, skinless chicken thighs
  • 200 grams Soba noodles
  • 3 tablespoons Black bean sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 Garlic cloves, minced
  • 1 teaspoon Ginger, minced
  • 1 Red bell pepper, julienned
  • 1 Carrot, julienned
  • 3 Green onions, sliced (white and green parts separated)
  • 2 tablespoons Vegetable oil
  • 100 milliliters Water
  • 1 tablespoon Toasted sesame seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a pot of water to a boil and cook the soba noodles according to package instructions. Once cooked, drain and rinse under cold water, then set aside.

Step 2

Cut the chicken thighs into bite-sized pieces and season with salt and black pepper.

Step 3

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove and set aside.

Step 4

In the same pan, add the remaining 1 tablespoon of vegetable oil. Stir-fry the garlic, ginger, white parts of the green onions, red bell pepper, and carrot for 2-3 minutes until fragrant and slightly softened.

Return the chicken to the pan, then add the black bean sauce, soy sauce, sesame oil, and water. Stir to combine and let it simmer for 2-3 minutes to coat the chicken and vegetables evenly.

Add the cooked soba noodles to the pan and toss gently to ensure everything is coated with the sauce. Cook for an additional 2-3 minutes until heated through.

Turn off the heat and garnish with the green parts of the green onions and toasted sesame seeds.
