Servings: 4

Ingredients

  • 400 g thinly sliced beef (ribeye or sirloin)
  • 1 large onion
  • 1 thumb-sized piece ginger
  • 4 tbsp soy sauce
  • 3 tbsp mirin
  • 2 tbsp sake
  • 2 tbsp sugar
  • 1 cup dashi stock
  • 4 servings cooked Japanese short-grain rice
  • 2 stalks green onions
  • 4 tbsp pickled red ginger (beni shoga)
  • 2 tsp sesame seeds (optional)

Directions

Step 1

Start by preparing all the ingredients. Thinly slice the onion into half-moons. Peel and julienne the ginger. Trim and finely slice the green onions for garnish.

Step 2

In a deep skillet or saucepan, combine soy sauce, mirin, sake, sugar, and dashi stock. Bring the mixture to a gentle simmer over medium heat.

Step 3

Add the sliced onions and ginger to the simmering sauce. Cook for about 5-7 minutes, or until the onions become soft and translucent.

Step 4

Add the thinly sliced beef to the skillet, separating the slices as you place them into the sauce. Simmer for another 5 minutes, stirring occasionally, until the beef is cooked through and tender.

Step 5

While the beef is cooking, prepare four bowls of freshly cooked rice by dividing the rice evenly among them.

Step 6

Once the beef and onions are ready, spoon the mixture, including the sauce, over the bowls of rice.

Step 7

Garnish each bowl with sliced green onions, a small mound of pickled red ginger, and a sprinkle of sesame seeds if using.

Step 8

Serve the gyudon immediately while steaming hot. Enjoy this comforting and flavorful dish!
